Ingredients:
- 2 cups finely shredded cabbage
- 1 cup grated carrots
- 1/2 cup chopped green onions
- 1 cup cooked chicken, diced (or tofu for a vegetarian option)
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ground ginger
- Salt and pepper to taste
- 1 package of egg roll wrappers
- Cooking spray or oil spray
Instructions:
- In a large mixing bowl, combine the cabbage, carrots, green onions, cooked chicken (or tofu), garlic, soy sauce, sesame oil, ginger, salt, and pepper. Mix thoroughly and let sit for a few minutes to meld the flavors.
- Lay one egg roll wrapper on a clean surface, with a corner pointing towards you. Spoon about 2 tablespoons of the filling onto the lower third of the wrapper. Fold the sides over the filling and roll upwards tightly. Seal the top edge with a little water. Repeat with remaining wrappers and filling, placing finished rolls on a baking sheet.
- Preheat the air fryer to 380°F (193°C) for about 5 minutes.
- Lightly spray the egg rolls with cooking spray. Place them in a single layer in the air fryer basket (cook in batches if necessary). Cook for 12-15 minutes, turning halfway, until golden brown and crispy.
- Remove from the air fryer and let cool slightly before serving. Enjoy with your favorite dipping sauce!
