Ingredients:

  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1/2 cup cooked protein (chicken, shrimp, or tofu)
  • 2 green onions, chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • Salt and pepper to taste
  • 8 egg roll wrappers
  • Cooking spray or olive oil for brushing

Instructions:

  1. In a mixing bowl, combine shredded cabbage, carrots, cooked protein, green onions, soy sauce, sesame oil, garlic powder, ginger powder, and seasoning.
  2. Cover the bowl with plastic wrap and chill for 30 minutes in the refrigerator.
  3. Lay an egg roll wrapper on a flat surface, spoon a portion of the filling onto the center, and fold the wrapper according to package instructions.
  4. Preheat the air fryer to 375°F (190°C).
  5. Lightly brush or spray the assembled egg rolls with cooking spray or oil.
  6. Place egg rolls in the air fryer basket in a single layer without overcrowding. Cook for 12-15 minutes, turning halfway, until golden brown and crispy.
  7. Serve hot with your favorite dipping sauce!
