Instructions:
- Prepare the Fennel: Remove the stalks and fronds from the fennel bulbs. Halve the bulbs lengthwise and carefully remove the hard core. Slice each half into uniform 1/4-inch (approx. 6mm) thick planks or wedges.
- Marinate/Toss: In a large mixing bowl, combine the sliced fennel, olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Toss thoroughly until every slice is lightly coated.
- Preheat Air Fryer: Preheat the air fryer to 380°F (195°C).
- Air Fry in Batches: Arrange the seasoned fennel slices in a single layer inside the air fryer basket. Do not overcrowd; work in batches if necessary.
- Cook and Flip: Cook for 6 minutes. Gently pull the basket out and toss or flip the fennel slices with tongs. Return to the air fryer.
- Finish Cooking: Continue cooking for another 6–9 minutes, checking often towards the end, until the edges are nicely browned and the fennel is tender when pierced with a fork.
- Serve: Immediately transfer the hot fennel to a serving platter. Garnish with fresh parsley (if using) and a final light sprinkle of flaky salt.
