Ingredients:

  • 1.25 lbs (565g) skinless salmon fillet, pin bones removed, cut into 1-inch cubes
  • 1 tbsp (15ml) olive oil
  • 1/2 tsp (2.5ml) garlic powder
  • 1/2 tsp (2.5ml) onion powder
  • 1/4 tsp (1.25ml) smoked paprika
  • 1/4 tsp (1.25ml) salt
  • 1/8 tsp (0.6ml) black pepper
  • 1/2 cup (50g) panko breadcrumbs
  • 1/4 cup (25g) grated Parmesan cheese
  • 1 tbsp (15ml) chopped fresh parsley
  • 1/2 cup (120ml) mayonnaise (full-fat or light)
  • 1 tbsp (15ml) lemon juice, fresh
  • 1 tbsp (15ml) chopped fresh dill
  • 1 clove garlic, minced
  • 1/4 tsp (1.25ml) Dijon mustard
  • Pinch of salt and pepper

Instructions:

  1. Cut salmon into 1-inch cubes. Pat dry with paper towels.
  2. In a bowl, toss salmon cubes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Ensure even coating.
  3. In another bowl, combine panko breadcrumbs, Parmesan cheese, and parsley.
  4. Dredge each salmon cube in the breadcrumb mixture, pressing lightly to adhere.
  5. Preheat air fryer to 400°F (200°C). Arrange salmon bites in a single layer in the air fryer basket. Cook for 8-10 minutes, flipping halfway through, until golden brown and cooked through (internal temperature reaches 145°F/63°C).
  6. While salmon cooks, whisk together mayonnaise, lemon juice, dill, garlic, Dijon mustard, salt, and pepper in a small bowl.
  7. Serve the crispy air fryer salmon bites immediately with the lemon-dill aioli for dipping.
