Ingredients:
- 1.25 lbs (565g) skinless salmon fillet, pin bones removed, cut into 1-inch cubes
- 1 tbsp (15ml) olive oil
- 1/2 tsp (2.5ml) garlic powder
- 1/2 tsp (2.5ml) onion powder
- 1/4 tsp (1.25ml) smoked paprika
- 1/4 tsp (1.25ml) salt
- 1/8 tsp (0.6ml) black pepper
- 1/2 cup (50g) panko breadcrumbs
- 1/4 cup (25g) grated Parmesan cheese
- 1 tbsp (15ml) chopped fresh parsley
- 1/2 cup (120ml) mayonnaise (full-fat or light)
- 1 tbsp (15ml) lemon juice, fresh
- 1 tbsp (15ml) chopped fresh dill
- 1 clove garlic, minced
- 1/4 tsp (1.25ml) Dijon mustard
- Pinch of salt and pepper
Instructions:
- Cut salmon into 1-inch cubes. Pat dry with paper towels.
- In a bowl, toss salmon cubes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Ensure even coating.
- In another bowl, combine panko breadcrumbs, Parmesan cheese, and parsley.
- Dredge each salmon cube in the breadcrumb mixture, pressing lightly to adhere.
- Preheat air fryer to 400°F (200°C). Arrange salmon bites in a single layer in the air fryer basket. Cook for 8-10 minutes, flipping halfway through, until golden brown and cooked through (internal temperature reaches 145°F/63°C).
- While salmon cooks, whisk together mayonnaise, lemon juice, dill, garlic, Dijon mustard, salt, and pepper in a small bowl.
- Serve the crispy air fryer salmon bites immediately with the lemon-dill aioli for dipping.
