Ingredients:
- 2 large Sweet Potatoes, peeled and sliced into 1/4 inch sticks
- 1.5 tbsp Avocado oil
- 1.5 tbsp Cornstarch
- 1 tsp Kosher salt
- 1/2 tsp Garlic powder
- 1/2 tsp Smoked paprika
- 1/4 tsp Cracked black pepper
Instructions:
- Peel 2 large sweet potatoes and trim the ends to create stable bases.
- Cut the potatoes into 1/4 inch (6mm) sticks. Note: Uniformity is key for even cooking.
- Spread the sticks on a clean kitchen towel and pat them until they are bone dry. Do not skip this.
- Place the dry sticks in a bowl and toss with 1.5 tbsp cornstarch. Wait until every fry is matte and white.
- Drizzle 1.5 tbsp avocado oil over the starched potatoes. Note: This creates the slurry that fries into a crust.
- Sprinkle in 1 tsp salt, 1/2 tsp garlic powder, 1/2 tsp smoked paprika, and 1/4 tsp pepper. Toss until the spices are evenly distributed.
- Set your machine to 190°C (380°F) for 3 minutes to preheat the fryer.
- Place the fries in a single layer in the basket. Cook 12 minutes total, shaking the basket halfway through until the edges are dark gold and stiff.
- Let them sit in the basket for 2 minutes after the timer goes off. Note: This allows the steam to escape so they don't soften immediately.
