Ingredients:
- 2 medium zucchini (about 450g total), sliced into 1/4-inch (6mm) thick rounds
- 1 tablespoon olive oil (15ml)
- 1/2 teaspoon garlic powder (2.5ml)
- 1/4 teaspoon salt (1.25ml)
- 1/4 teaspoon black pepper (1.25ml)
- 1/4 cup grated Parmesan cheese (25g) (optional)
Instructions:
- Slice the zucchini into even 1/4-inch rounds.
- In a large bowl, toss the zucchini slices with olive oil, garlic powder, salt, and pepper. Make sure they're evenly coated.
- Sprinkle grated Parmesan cheese over the zucchini slices and toss to coat (optional).
- Arrange the zucchini slices in a single layer in the air fryer basket. Avoid overcrowding! You may need to work in batches.
- Air fry at 400°F (200°C) for 8-10 minutes, or until the zucchini is tender and the edges are golden brown. Flip halfway through for even cooking.
- Remove from the air fryer and serve immediately with your favorite dipping sauce.
