Ingredients:

  • 2 medium zucchini (about 450g total), sliced into 1/4-inch (6mm) thick rounds
  • 1 tablespoon olive oil (15ml)
  • 1/2 teaspoon garlic powder (2.5ml)
  • 1/4 teaspoon salt (1.25ml)
  • 1/4 teaspoon black pepper (1.25ml)
  • 1/4 cup grated Parmesan cheese (25g) (optional)

Instructions:

  1. Slice the zucchini into even 1/4-inch rounds.
  2. In a large bowl, toss the zucchini slices with olive oil, garlic powder, salt, and pepper. Make sure they're evenly coated.
  3. Sprinkle grated Parmesan cheese over the zucchini slices and toss to coat (optional).
  4. Arrange the zucchini slices in a single layer in the air fryer basket. Avoid overcrowding! You may need to work in batches.
  5. Air fry at 400°F (200°C) for 8-10 minutes, or until the zucchini is tender and the edges are golden brown. Flip halfway through for even cooking.
  6. Remove from the air fryer and serve immediately with your favorite dipping sauce.
