Ingredients:
- 2 medium zucchini (approx. 450g), cut into ½-inch thick fries
- ½ teaspoon kosher salt, plus more to taste
- ¼ teaspoon black pepper, plus more to taste
- ½ cup all-purpose flour (60g)
- 2 large eggs, lightly beaten
- 1 cup panko breadcrumbs (60g)
- ½ cup grated Parmesan cheese (50g)
- 1 teaspoon garlic powder
- ½ teaspoon Italian seasoning
- Olive oil spray
Instructions:
- Cut zucchini into fries, toss with salt and pepper, and let sit for 15 minutes (optional, to draw out excess moisture). Pat dry with paper towels.
- Place flour in one dish, beaten eggs in the second, and panko breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning in the third dish. Mix the dry ingredients in the panko dish well.
- Dip each zucchini fry in flour, then egg, then panko mixture, ensuring it’s fully coated.
- Preheat air fryer to 400°F (200°C). Arrange zucchini fries in a single layer in the air fryer basket (you may need to work in batches). Spray lightly with olive oil spray.
- Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately with your favourite dipping sauce.
