Ingredients:
- 2 medium zucchini (about 1 pound / 450g), trimmed and cut into ½-inch thick fries
- 1 large egg
- ½ cup (60g) all-purpose flour
- 1 cup (100g) panko breadcrumbs
- ¼ cup (25g) grated Parmesan cheese
- 1 teaspoon garlic powder
- ½ teaspoon dried oregano
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- Cooking spray
- ½ cup (120g) mayonnaise
- 1 tablespoon lemon juice, freshly squeezed
- 1 clove garlic, minced
- ¼ teaspoon lemon zest
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
Instructions:
- Cut zucchini into uniform fry shapes.
- Place flour in one bowl, beaten egg in the second, and a mixture of panko, parmesan, garlic powder, oregano, salt, and pepper in the third.
- Dredge each zucchini fry in flour, then dip in egg, and finally coat thoroughly with the panko mixture. Press firmly to ensure the breading adheres.
- Preheat the air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray. Arrange the breaded zucchini fries in a single layer in the air fryer basket, being careful not to overcrowd. You may need to cook in batches.
- Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Whisk together the mayonnaise, lemon juice, minced garlic, lemon zest, salt, and pepper in a small bowl.
- Serve the crispy air fryer zucchini fries immediately with the lemon-garlic aioli for dipping.
