Ingredients:

  • 2 medium zucchini (about 1 pound / 450g), trimmed and cut into ½-inch thick fries
  • 1 large egg
  • ½ cup (60g) all-purpose flour
  • 1 cup (100g) panko breadcrumbs
  • ¼ cup (25g) grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • Cooking spray
  • ½ cup (120g) mayonnaise
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 clove garlic, minced
  • ¼ teaspoon lemon zest
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions:

  1. Cut zucchini into uniform fry shapes.
  2. Place flour in one bowl, beaten egg in the second, and a mixture of panko, parmesan, garlic powder, oregano, salt, and pepper in the third.
  3. Dredge each zucchini fry in flour, then dip in egg, and finally coat thoroughly with the panko mixture. Press firmly to ensure the breading adheres.
  4. Preheat the air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray. Arrange the breaded zucchini fries in a single layer in the air fryer basket, being careful not to overcrowd. You may need to cook in batches.
  5. Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  6. Whisk together the mayonnaise, lemon juice, minced garlic, lemon zest, salt, and pepper in a small bowl.
  7. Serve the crispy air fryer zucchini fries immediately with the lemon-garlic aioli for dipping.
