Ingredients:
- 2 medium zucchini (about 1 pound / 450g), cut into 1/2-inch thick fries
- 1/2 cup all-purpose flour (60g), or gluten-free all-purpose blend
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, lightly beaten
- 1 cup panko breadcrumbs (80g)
- 1/2 cup grated Parmesan cheese (50g)
- 2 tablespoons olive oil
- 1/2 cup mayonnaise (120ml)
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions:
- Wash and cut the zucchini into fries.
- In three separate shallow bowls, place the flour mixture, the beaten eggs, and the panko breadcrumbs mixed with Parmesan cheese.
- Dredge each zucchini fry in the flour mixture, then dip it in the egg, and finally coat it thoroughly with the panko-Parmesan mixture.
- Preheat the air fryer to 400°F (200°C). Lightly brush or spray the air fryer basket with olive oil. Arrange the breaded zucchini fries in a single layer in the air fryer basket (you may need to cook in batches).
- Air fry for 10-15 minutes, flipping halfway through, until golden brown and crispy.
- While the zucchini fries are cooking, whisk together the mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl.
- Serve the hot zucchini fries with the garlic aioli for dipping.
