Ingredients:

  • 2 medium zucchini (about 1 pound / 450g), cut into 1/2-inch thick fries
  • 1/2 cup all-purpose flour (60g), or gluten-free all-purpose blend
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, lightly beaten
  • 1 cup panko breadcrumbs (80g)
  • 1/2 cup grated Parmesan cheese (50g)
  • 2 tablespoons olive oil
  • 1/2 cup mayonnaise (120ml)
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions:

  1. Wash and cut the zucchini into fries.
  2. In three separate shallow bowls, place the flour mixture, the beaten eggs, and the panko breadcrumbs mixed with Parmesan cheese.
  3. Dredge each zucchini fry in the flour mixture, then dip it in the egg, and finally coat it thoroughly with the panko-Parmesan mixture.
  4. Preheat the air fryer to 400°F (200°C). Lightly brush or spray the air fryer basket with olive oil. Arrange the breaded zucchini fries in a single layer in the air fryer basket (you may need to cook in batches).
  5. Air fry for 10-15 minutes, flipping halfway through, until golden brown and crispy.
  6. While the zucchini fries are cooking, whisk together the mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl.
  7. Serve the hot zucchini fries with the garlic aioli for dipping.
