  • 4 large russet potatoes (about 1 kg)
  • 3 tablespoons olive oil (45 ml)
  • 1 teaspoon salt (5 g)
  • ½ teaspoon black pepper (2 g)
  • 1 teaspoon garlic powder (3 g)
  • 1 teaspoon smoked paprika (2 g)
  • Optional: Fresh herbs (like rosemary or thyme) for garnish

Instructions:

  1. Wash and peel the russet potatoes, then cut into fries about 1/4 inch thick.
  2. Place cut fries in a large bowl of cold water for at least 30 minutes to remove excess starch.
  3. Preheat the oven to 425°F (220°C) during the last 10 minutes of soaking.
  4. Drain the soaked fries and pat them dry with a clean kitchen towel.
  5. In a large mixing bowl, combine fries, olive oil, salt, black pepper, garlic powder, and smoked paprika. Toss until evenly coated.
  6. Spread fries in a single layer on a baking sheet lined with parchment paper, ensuring they are not overcrowded.
  7. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  8. Remove from the oven, let cool for a minute, and garnish with fresh herbs if desired. Serve immediately.
