Ingredients:

  • 1 pound (450g) large shrimp, peeled and deveined
  • 1/2 teaspoon (2.5ml) salt
  • 1/4 teaspoon (1.25ml) ground white pepper
  • 1/4 cup (30g) cornstarch (cornflour)
  • 1/4 cup (30g) all-purpose flour (plain flour)
  • 1 large egg, lightly beaten
  • 1/4 cup (60ml) cold water
  • Vegetable oil, for frying (approx. 4 cups/950ml)
  • 1/2 cup (120ml) mayonnaise
  • 1/4 cup (60ml) honey
  • 1 tablespoon (15ml) sweetened condensed milk
  • 1/2 teaspoon (2.5ml) lemon juice
  • 1 cup (100g) walnut halves
  • 1/4 cup (50g) granulated sugar
  • 2 tablespoons (30ml) water
  • Pinch of salt
  • Sesame seeds (optional)
  • Chopped green onions (scallions) (optional)

Instructions:

  1. Pat shrimp dry, season with salt and white pepper.
  2. Whisk together cornstarch, flour, egg, and cold water until smooth. Chill for at least 30 minutes.
  3. Combine walnuts, sugar, water, and salt in a saucepan. Cook over medium heat, stirring constantly, until sugar melts and coats the walnuts. Spread walnuts on a baking sheet lined with parchment paper to cool and harden.
  4. Whisk together mayonnaise, honey, sweetened condensed milk, and lemon juice in a bowl.
  5. Heat vegetable oil in a deep fryer or pot to 350°F (175°C). Dip shrimp in the batter, one at a time, and carefully drop into the hot oil. Fry in batches until golden brown and cooked through (about 2-3 minutes).
  6. Remove shrimp with a slotted spoon and drain on paper towels. Toss the fried shrimp with the honey glaze until evenly coated.
  7. Arrange shrimp on a serving platter. Top with candied walnuts, sesame seeds, and chopped green onions (if using). Serve immediately. This Crispy Honey Walnut Shrimp recipe is best served hot and crispy!
