Ingredients:
- 1 pound (450g) large shrimp, peeled and deveined
- 1/2 teaspoon (2.5ml) salt
- 1/4 teaspoon (1.25ml) ground white pepper
- 1/4 cup (30g) cornstarch (cornflour)
- 1/4 cup (30g) all-purpose flour (plain flour)
- 1 large egg, lightly beaten
- 1/4 cup (60ml) cold water
- Vegetable oil, for frying (approx. 4 cups/950ml)
- 1/2 cup (120ml) mayonnaise
- 1/4 cup (60ml) honey
- 1 tablespoon (15ml) sweetened condensed milk
- 1/2 teaspoon (2.5ml) lemon juice
- 1 cup (100g) walnut halves
- 1/4 cup (50g) granulated sugar
- 2 tablespoons (30ml) water
- Pinch of salt
- Sesame seeds (optional)
- Chopped green onions (scallions) (optional)
Instructions:
- Pat shrimp dry, season with salt and white pepper.
- Whisk together cornstarch, flour, egg, and cold water until smooth. Chill for at least 30 minutes.
- Combine walnuts, sugar, water, and salt in a saucepan. Cook over medium heat, stirring constantly, until sugar melts and coats the walnuts. Spread walnuts on a baking sheet lined with parchment paper to cool and harden.
- Whisk together mayonnaise, honey, sweetened condensed milk, and lemon juice in a bowl.
- Heat vegetable oil in a deep fryer or pot to 350°F (175°C). Dip shrimp in the batter, one at a time, and carefully drop into the hot oil. Fry in batches until golden brown and cooked through (about 2-3 minutes).
- Remove shrimp with a slotted spoon and drain on paper towels. Toss the fried shrimp with the honey glaze until evenly coated.
- Arrange shrimp on a serving platter. Top with candied walnuts, sesame seeds, and chopped green onions (if using). Serve immediately. This Crispy Honey Walnut Shrimp recipe is best served hot and crispy!
