Ingredients:

  • 2 large sweet potatoes (approx. 700g / 1.5 lbs), scrubbed and cut into wedges
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon smoked paprika (5 ml)
  • ½ teaspoon garlic powder (2.5 ml)
  • ½ teaspoon onion powder (2.5 ml)
  • ¼ - ½ teaspoon cayenne pepper (1.25 - 2.5 ml)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon cornstarch (15 ml)

Instructions:

  1. Preheat oven to 200°C / 400°F / Gas Mark 6.
  2. Cut sweet potatoes into even-sized wedges.
  3. In a large bowl, toss the wedges with olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, pepper, and cornstarch until evenly coated.
  4. Spread the wedges in a single layer on the prepared baking sheet, making sure they're not overcrowded.
  5. Bake for 25-30 minutes, flipping halfway through, or until the wedges are tender on the inside and crispy on the outside.
  6. Remove from oven and serve immediately as sweet potato wedges.
