Ingredients:

  • 2 pounds (900g) Russet potatoes, peeled
  • 4 cups (950ml) cold water, plus more for soaking
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Freshly ground black pepper, to taste

Instructions:

  1. Peel potatoes (if using russets). Cut into ½ inch thick fries.
  2. Place cut fries in a large bowl and cover with cold water. Let soak for at least 30 minutes (up to 2 hours).
  3. Preheat oven to 450°F (232°C). Prepare baking sheet with parchment paper (optional).
  4. Drain the soaked fries and pat completely dry with paper towels.
  5. In a large bowl, toss the dried fries with olive oil, salt, garlic powder, smoked paprika (if using), and black pepper.
  6. Spread the seasoned fries in a single layer on the prepared baking sheet. Avoid overcrowding.
  7. Bake for 20 minutes. Flip the fries and bake for another 15-25 minutes, or until golden brown and crispy.
  8. Remove from oven, season with additional salt to taste (if desired). Serve immediately.
