Ingredients:

  • 2 lbs beef sirloin tips (cut into bite-sized pieces)
  • 1 cup beef broth
  • 1 cup onion (finely chopped, about 1 medium onion)
  • 2 cloves garlic (minced)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • .25 cup all-purpose flour (for thickening)
  • .5 cup heavy cream or sour cream (optional gravy enhancement)

Instructions:

  1. Trim any excess fat from the beef sirloin tips and cut them into bite-sized pieces.
  2. In a large skillet over medium-high heat
  3. Layer seared beef tips in the bottom of your crock pot. Add chopped onions, minced garlic, dried thyme, rosemary, Worcestershire sauce, soy sauce, and beef broth.
  4. In a small bowl, mix together flour with a couple of tablespoons of water to create a slurry; this will help thicken your gravy later.
  5. Stir in the flour slurry with other ingredients in your crock pot until well combined.
  6. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours until meat is tender.
  7. (Optional) About 30 minutes before serving time, stir heavy cream or sour cream into the mixture for added richness.
  8. Once cooked through and tender, give it a good stir before serving.
  9. Adjust seasoning with extra salt and pepper as needed according to taste preference.
  10. Serve hot over mashed potatoes or rice!
