Ingredients:

  • 1 pound dried black beans, rinsed and sorted
  • 4 cups vegetable broth (or water)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro for garnish (optional)

Instructions:

  1. Place the rinsed black beans in the crock pot.
  2. Add the diced onion, garlic, and bell pepper to the crock pot.
  3. Sprinkle in the ground cumin, smoked paprika, chili powder, salt, and pepper.
  4. Pour in the vegetable broth or water until all ingredients are covered.
  5. Cover and cook on low for about 8 hours or high for about 4 hours until beans are tender.
  6. Once cooked, stir in lime juice before serving.
  7. Serve warm with fresh cilantro as a garnish if desired.
