Ingredients:
- 1 pound dried black beans, rinsed and sorted
- 4 cups vegetable broth (or water)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- Salt and pepper to taste
- Juice of 1 lime
- Fresh cilantro for garnish (optional)
Instructions:
- Place the rinsed black beans in the crock pot.
- Add the diced onion, garlic, and bell pepper to the crock pot.
- Sprinkle in the ground cumin, smoked paprika, chili powder, salt, and pepper.
- Pour in the vegetable broth or water until all ingredients are covered.
- Cover and cook on low for about 8 hours or high for about 4 hours until beans are tender.
- Once cooked, stir in lime juice before serving.
- Serve warm with fresh cilantro as a garnish if desired.
