Ingredients:
- 4 boneless, skinless chicken breasts (or thighs)
- 4 medium-sized potatoes, diced (or use sweet potatoes)
- 1 cup low-sodium chicken broth (or vegetable broth)
- 1 packet ranch seasoning mix (or homemade seasoning blend)
- 2 cups green beans, trimmed (or frozen mixed vegetables)
- 1 onion, chopped
- 3 cloves garlic, minced
- Salt and pepper to taste
- Olive oil spray (or coconut oil)
Instructions:
- Prepare the Ingredients: Spray the crock pot with olive oil. Place the diced potatoes at the bottom.
- Season the Chicken: Rub the ranch seasoning mix over the chicken breasts and place them on top of the potatoes.
- Add Vegetables: Layer in chopped onions, minced garlic, and green beans around and on top of the chicken.
- Pour Broth: Carefully pour in the low-sodium chicken broth ensuring it covers some of the ingredients.
- Cook: Cover with lid and cook on low for about 6–8 hours or high for about 3–4 hours until chicken is cooked through and tender.
- Serve: Shred or slice chicken before serving; stir everything together to combine flavors.
