Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 4 medium-sized potatoes, diced (or use sweet potatoes)
  • 1 cup low-sodium chicken broth (or vegetable broth)
  • 1 packet ranch seasoning mix (or homemade seasoning blend)
  • 2 cups green beans, trimmed (or frozen mixed vegetables)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil spray (or coconut oil)

Instructions:

  1. Prepare the Ingredients: Spray the crock pot with olive oil. Place the diced potatoes at the bottom.
  2. Season the Chicken: Rub the ranch seasoning mix over the chicken breasts and place them on top of the potatoes.
  3. Add Vegetables: Layer in chopped onions, minced garlic, and green beans around and on top of the chicken.
  4. Pour Broth: Carefully pour in the low-sodium chicken broth ensuring it covers some of the ingredients.
  5. Cook: Cover with lid and cook on low for about 6–8 hours or high for about 3–4 hours until chicken is cooked through and tender.
  6. Serve: Shred or slice chicken before serving; stir everything together to combine flavors.
