Ingredients:

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 8 oz cream cheese, softened and cubed
  • 2 cups shredded sharp cheddar cheese
  • 8 oz Velveeta or processed cheese product, cubed
  • 1 packet (30g) taco seasoning
  • 1 can (14.5 oz) diced tomatoes with green chilies, undrained
  • 1/2 cup sour cream

Instructions:

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until fully browned. Drain the excess grease thoroughly.
  2. Transfer the browned beef to the slow cooker.
  3. Add the cubed cream cheese, cubed Velveeta, shredded cheddar, taco seasoning, and undrained tomatoes. Stir gently to combine.
  4. Cover and cook on LOW for 2 hours. Every 30-45 minutes, gently fold the mixture with a spatula until the cheese is completely integrated and the dip is smooth and bubbling.
