Ingredients:

  • 1 whole young goose (about 4-5 pounds)
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon dried thyme
  • 2 medium onions, quartered
  • 2 cups chicken or vegetable broth
  • 1 cup pure maple syrup
  • 1/4 cup soy sauce
  • 2 tablespoons apple cider vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 3 whole cinnamon sticks
  • 1/2 cup dried cranberries (optional)
  • Fresh thyme sprigs for garnish (optional)

Instructions:

  1. Rinse the goose under cold water and pat it dry with paper towels. Trim any excess fat from the cavity and skin.
  2. Rub the kosher salt, black pepper, and dried thyme all over the goose, including inside the cavity.
  3. Place quartered onions at the bottom of the crock pot to create a bed for the goose.
  4. Place the goose on top of the onions, breast side up.
  5. In a bowl, combine the maple syrup, soy sauce, apple cider vinegar, minced garlic, ground ginger, and ground cinnamon. Pour this mixture over the goose.
  6. Carefully pour the chicken or vegetable broth around the sides of the goose in the crock pot.
  7. Place the whole cinnamon sticks and dried cranberries (if using) around the goose in the crock pot.
  8. Secure the lid on the crock pot and set it to low heat. Cook for 8 hours, or until the goose is tender.
  9. Once cooked, carefully remove the goose from the crock pot. Let it rest for about 10-15 minutes before carving.
