Ingredients:
- 1 whole young goose (about 4-5 pounds)
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
- 1 tablespoon dried thyme
- 2 medium onions, quartered
- 2 cups chicken or vegetable broth
- 1 cup pure maple syrup
- 1/4 cup soy sauce
- 2 tablespoons apple cider vinegar
- 4 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 3 whole cinnamon sticks
- 1/2 cup dried cranberries (optional)
- Fresh thyme sprigs for garnish (optional)
Instructions:
- Rinse the goose under cold water and pat it dry with paper towels. Trim any excess fat from the cavity and skin.
- Rub the kosher salt, black pepper, and dried thyme all over the goose, including inside the cavity.
- Place quartered onions at the bottom of the crock pot to create a bed for the goose.
- Place the goose on top of the onions, breast side up.
- In a bowl, combine the maple syrup, soy sauce, apple cider vinegar, minced garlic, ground ginger, and ground cinnamon. Pour this mixture over the goose.
- Carefully pour the chicken or vegetable broth around the sides of the goose in the crock pot.
- Place the whole cinnamon sticks and dried cranberries (if using) around the goose in the crock pot.
- Secure the lid on the crock pot and set it to low heat. Cook for 8 hours, or until the goose is tender.
- Once cooked, carefully remove the goose from the crock pot. Let it rest for about 10-15 minutes before carving.
