Ingredients:
- 1 lb ground turkey
- 2 cups diced potatoes (about 2 medium potatoes)
- 1 cup chopped carrots (about 2 medium carrots)
- 1 cup chopped celery (about 2 stalks)
- 1 cup onion, diced (about 1 medium onion)
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes with juice
- 2 cups low-sodium chicken broth or stock
- 1 tsp dried thyme
- 1 tsp dried basil
- ½ tsp paprika
- [Salt and pepper to taste]
- ¼ cup fresh parsley, chopped (for garnish)
Instructions:
- In a skillet over medium heat, add the ground turkey and cook until browned, about 5 minutes. Use a spatula to break it into smaller pieces as it cooks. Drain any excess fat if necessary.
- While the turkey is cooking, prepare your vegetables by peeling and dicing them into even-sized pieces for uniform cooking.
- Add the browned ground turkey to your crock pot along with the diced potatoes, carrots, celery, onion, garlic, canned tomatoes with their juice, chicken broth, thyme, basil, paprika; season with salt and pepper.
- Gently stir all ingredients together in the crock pot until well combined.
- Cover the crock pot with its lid: Cook on low for about 6 hours. Alternatively, cook on high for about 3 hours.
- After cooking time is complete: Taste and adjust seasoning as necessary before serving.
- Serve: Ladle stew into bowls and garnish with fresh parsley just before serving.
