Ingredients:

  • 1 lb ground turkey
  • 2 cups diced potatoes (about 2 medium potatoes)
  • 1 cup chopped carrots (about 2 medium carrots)
  • 1 cup chopped celery (about 2 stalks)
  • 1 cup onion, diced (about 1 medium onion)
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with juice
  • 2 cups low-sodium chicken broth or stock
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • ½ tsp paprika
  • [Salt and pepper to taste]
  • ¼ cup fresh parsley, chopped (for garnish)

Instructions:

  1. In a skillet over medium heat, add the ground turkey and cook until browned, about 5 minutes. Use a spatula to break it into smaller pieces as it cooks. Drain any excess fat if necessary.
  2. While the turkey is cooking, prepare your vegetables by peeling and dicing them into even-sized pieces for uniform cooking.
  3. Add the browned ground turkey to your crock pot along with the diced potatoes, carrots, celery, onion, garlic, canned tomatoes with their juice, chicken broth, thyme, basil, paprika; season with salt and pepper.
  4. Gently stir all ingredients together in the crock pot until well combined.
  5. Cover the crock pot with its lid: Cook on low for about 6 hours. Alternatively, cook on high for about 3 hours.
  6. After cooking time is complete: Taste and adjust seasoning as necessary before serving.
  7. Serve: Ladle stew into bowls and garnish with fresh parsley just before serving.
