Ingredients:
- 3 lbs boneless, skinless chicken thighs
- 1 tsp sea salt
- ½ tsp cracked black pepper
- 1 tsp garlic powder
- 1 tsp dried thyme
- 2 cups low-sodium chicken broth
- 2 tbsp unsalted butter, melted
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- ¼ cup all-purpose flour
- ½ cup heavy cream
Instructions:
- Pat the chicken thighs dry with paper towels. In a small bowl, combine salt, pepper, garlic powder, and thyme. Rub the spice blend evenly over both sides of the meat.
- Place the seasoned chicken thighs in the bottom of the crockpot. Stir together the chicken broth, diced onion, and minced garlic, then pour the mixture over the chicken.
- Cover and cook on Low for 6-8 hours or High for 3-4 hours until the chicken is tender enough to shred with a fork.
- In a small bowl, whisk the melted butter and flour together to create a roux paste. Whisk this paste into the slow cooker liquids once the chicken is cooked.
- Stir gently for 10-15 minutes on high heat until the gravy is glossy and thickened. Stir in the heavy cream just before serving.
