Ingredients:
- 2 oz dark rum
- 4 oz spicy ginger beer
- 0.5 oz fresh lime juice
- 1 lime wedge
- 1 cup ice cubes
Instructions:
- Fill a highball glass to the brim with large, solid ice cubes to ensure minimal dilution.
- Pour the 4 oz of chilled spicy ginger beer over the ice, leaving about an inch of space at the top. Stir once very gently.
- Pour the 0.5 oz of freshly squeezed lime juice into the ginger beer.
- Hold a bar spoon upside down just above the surface of the ginger beer. Slowly pour 2 oz of dark rum over the back of the spoon to create the signature dark float layer.
- Garnish with a lime wedge or wheel and serve immediately.
