Ingredients:

  • 2 oz dark rum
  • 4 oz spicy ginger beer
  • 0.5 oz fresh lime juice
  • 1 lime wedge
  • 1 cup ice cubes

Instructions:

  1. Fill a highball glass to the brim with large, solid ice cubes to ensure minimal dilution.
  2. Pour the 4 oz of chilled spicy ginger beer over the ice, leaving about an inch of space at the top. Stir once very gently.
  3. Pour the 0.5 oz of freshly squeezed lime juice into the ginger beer.
  4. Hold a bar spoon upside down just above the surface of the ginger beer. Slowly pour 2 oz of dark rum over the back of the spoon to create the signature dark float layer.
  5. Garnish with a lime wedge or wheel and serve immediately.
