Ingredients:

  • ½ cup (115g) unsalted butter
  • 1 cup (170g) semi-sweet chocolate chips or chopped chocolate
  • 2 large eggs
  • 2 large egg yolks
  • ½ cup (100g) granulated sugar
  • 2 teaspoons vanilla extract
  • ¼ cup (35g) all-purpose flour
  • Powdered sugar, for dusting
  • Vanilla ice cream or whipped cream

Instructions:

  1. Grease four ramekins and place them in the Dutch oven. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine the chocolate and butter. Melt in the microwave or over a double boiler until smooth, stirring occasionally.
  3. In another bowl, whisk together the eggs, egg yolks, and sugar until pale and slightly thickened.
  4. Fold the melted chocolate mixture into the egg mixture. Add vanilla and flour. Mix until just combined.
  5. Cover and refrigerate the batter for about 30 minutes to firm up.
  6. Pour the chilled batter evenly into the prepared ramekins.
  7. Cover the Dutch oven with its lid and bake for 12-14 minutes, until the edges are set but the centre is still soft.
  8. Let the ramekins cool for 1 minute. Run a knife around the edges and invert onto plates. Dust with powdered sugar and serve with ice cream, if desired.
