Ingredients:

  • 1 ½ cups (180g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, chilled and cubed
  • 1 large egg yolk
  • 2-3 tablespoons ice water
  • 1 cup (240ml) light corn syrup
  • ¾ cup (150g) packed brown sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • ¼ teaspoon salt
  • 1 ½ cups (180g) pecans, chopped

Instructions:

  1. Combine flour, sugar, and salt in a bowl. Cut in chilled butter until mixture resembles coarse crumbs. Mix egg yolk and ice water, then stir into the flour mixture until combined. Press dough into the bottom of a lined baking pan. Chill for 30 minutes.
  2. Set oven to 350°F (175°C).
  3. Bake chilled crust for 15-20 minutes until lightly golden.
  4. In a bowl, whisk together corn syrup, brown sugar, eggs, vanilla, and salt until smooth. Stir in chopped pecans.
  5. Pour filling over the baked crust. Bake for an additional 30-35 minutes until set. Let cool completely in the pan before slicing.
  6. Cut into squares and enjoy!
