Ingredients:
- 2 cups all-purpose flour (240g)
- 1 ½ cups granulated sugar (300g)
- ½ cup unsweetened cocoa powder (50g)
- 1 tsp baking powder (5g)
- 1 tsp baking soda (5g)
- ½ tsp salt (2g)
- 1 cup buttermilk (240ml)
- ½ cup vegetable oil (120ml)
- 3 large eggs
- 1 tsp vanilla extract (5ml)
- 8 oz cream cheese, softened (225g)
- ½ cup powdered sugar (60g)
- 1 large egg
- 1 tsp vanilla extract (5ml)
- 2 cups fresh strawberries, hulled and sliced (300g)
Instructions:
- Preheat the oven to 350°F (175°C). Grease the baking pan.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix buttermilk, oil, eggs, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- In a mixing bowl, beat softened cream cheese, powdered sugar, and egg until smooth.
- Pour half of the cake batter into the prepared pan. Evenly spread sliced strawberries over the batter.
- Drop spoonfuls of the cream cheese filling on top of the strawberries. Pour the remaining batter over the filling.
- Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 20 minutes, then transfer to a cooling rack to cool completely.
