Ingredients:

  • 2 cups all-purpose flour (240g)
  • 1 ½ cups granulated sugar (300g)
  • ½ cup unsweetened cocoa powder (50g)
  • 1 tsp baking powder (5g)
  • 1 tsp baking soda (5g)
  • ½ tsp salt (2g)
  • 1 cup buttermilk (240ml)
  • ½ cup vegetable oil (120ml)
  • 3 large eggs
  • 1 tsp vanilla extract (5ml)
  • 8 oz cream cheese, softened (225g)
  • ½ cup powdered sugar (60g)
  • 1 large egg
  • 1 tsp vanilla extract (5ml)
  • 2 cups fresh strawberries, hulled and sliced (300g)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease the baking pan.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix buttermilk, oil, eggs, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. In a mixing bowl, beat softened cream cheese, powdered sugar, and egg until smooth.
  6. Pour half of the cake batter into the prepared pan. Evenly spread sliced strawberries over the batter.
  7. Drop spoonfuls of the cream cheese filling on top of the strawberries. Pour the remaining batter over the filling.
  8. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool in the pan for 20 minutes, then transfer to a cooling rack to cool completely.
