Ingredients:
- 2 tablespoons unsalted butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup red wine (such as Merlot or Cabernet Sauvignon)
- 1 cup beef or vegetable stock
- 1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme
- Salt and black pepper, to taste
- 1 tablespoon cornstarch (optional, for thickening)
Instructions:
- Heat the unsalted butter in a large sauté pan over medium heat.
- Add the chopped onion and garlic, sauté until softened (about 5 minutes).
- Pour in the red wine, stirring to combine and bring to a simmer, allowing to reduce by half (about 5-7 minutes).
- Add the beef or vegetable stock and thyme, continuing to simmer for another 5-10 minutes.
- Taste and season with salt and black pepper. If desired, use cornstarch to thicken by mixing it with a little cold water and whisking it into the sauce.
- Once thickened to your liking, remove from heat and serve hot over your favorite dish.
