Ingredients:
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 package (12 oz) of cornbread stuffing mix
- 2 cups low-sodium chicken broth
- 1/2 cup celery, diced
- 1/2 cup onion, diced
- (Optional) Fresh parsley for garnish
Instructions:
- Season both sides of the chicken breasts with salt, pepper, garlic powder, and onion powder.
- Place the seasoned chicken breasts at the bottom of a large crock pot.
- In a separate bowl, combine the cornbread stuffing mix with diced celery and onions. Gradually pour in the chicken broth while stirring until well combined.
- Pour the dressing mixture over the seasoned chicken in the crock pot. Make sure to cover all pieces of chicken evenly with dressing.
- Cover and cook on low for about 6 hours or high for 3 hours. The chicken should be cooked through and tender when done.
- Once cooked, remove chicken from crock pot and shred it using two forks. Return shredded chicken back into the dressing mixture; stir gently to combine.
- Garnish with fresh parsley if desired before serving.
