Ingredients:

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 package (12 oz) of cornbread stuffing mix
  • 2 cups low-sodium chicken broth
  • 1/2 cup celery, diced
  • 1/2 cup onion, diced
  • (Optional) Fresh parsley for garnish

Instructions:

  1. Season both sides of the chicken breasts with salt, pepper, garlic powder, and onion powder.
  2. Place the seasoned chicken breasts at the bottom of a large crock pot.
  3. In a separate bowl, combine the cornbread stuffing mix with diced celery and onions. Gradually pour in the chicken broth while stirring until well combined.
  4. Pour the dressing mixture over the seasoned chicken in the crock pot. Make sure to cover all pieces of chicken evenly with dressing.
  5. Cover and cook on low for about 6 hours or high for 3 hours. The chicken should be cooked through and tender when done.
  6. Once cooked, remove chicken from crock pot and shred it using two forks. Return shredded chicken back into the dressing mixture; stir gently to combine.
  7. Garnish with fresh parsley if desired before serving.
