Ingredients:
- 1 lb lean ground beef (90% lean)
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 can (15 oz) diced tomatoes, unsalted
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (8 oz) tomato sauce, no salt added
- 1 packet (1 oz) low-sodium chili seasoning packet
- 1 cup low-sodium beef broth
Instructions:
- Place the raw ground beef at the bottom of the slow cooker. Note: This ensures the meat is fully submerged in liquid as it cooks.
- Spread the beef into an even layer. Until it covers the bottom.
- Add the diced onion and minced garlic directly on top of the meat.
- Pour in the diced tomatoes, kidney beans, black beans, and tomato sauce.
- Sprinkle the chili packet evenly over the top. Note: Don't stir yet to keep the spices layered.
- Secure the lid and set the slow cooker to High for 4 hours until the meat is tender.
- Stir the mixture together, breaking up any remaining meat clumps with your spatula.
- Check the consistency. If it's too thick, stir in beef broth 1/4 cup at a time until it reaches your preferred thickness.
