Ingredients:

  • 1 lb lean ground beef (90% lean)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes, unsalted
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (8 oz) tomato sauce, no salt added
  • 1 packet (1 oz) low-sodium chili seasoning packet
  • 1 cup low-sodium beef broth

Instructions:

  1. Place the raw ground beef at the bottom of the slow cooker. Note: This ensures the meat is fully submerged in liquid as it cooks.
  2. Spread the beef into an even layer. Until it covers the bottom.
  3. Add the diced onion and minced garlic directly on top of the meat.
  4. Pour in the diced tomatoes, kidney beans, black beans, and tomato sauce.
  5. Sprinkle the chili packet evenly over the top. Note: Don't stir yet to keep the spices layered.
  6. Secure the lid and set the slow cooker to High for 4 hours until the meat is tender.
  7. Stir the mixture together, breaking up any remaining meat clumps with your spatula.
  8. Check the consistency. If it's too thick, stir in beef broth 1/4 cup at a time until it reaches your preferred thickness.
