Ingredients:
- 680g (1.5 lbs) chicken breasts
- 30 ml (2 tbsp) olive oil
- 1 tbsp garlic powder
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp smoked paprika
- 0.5 tsp onion powder
- 1 tsp kosher salt
- 0.5 tsp black pepper
Instructions:
- Prep the meat. Pat the 680g of chicken breasts completely dry with paper towels. Note: Surface moisture is the enemy of a good sear.
- Evening the thickness. Place chicken between plastic wrap and gently pound the thickest parts. Do this until the breast is a uniform thickness.
- Oil the surface. Drizzle 30 ml of olive oil over the chicken and massage it in.
- Mix the rub. Combine garlic powder, oregano, thyme, paprika, onion powder, salt, and pepper in a small bowl.
- Coat thoroughly. Sprinkle the spice mix over the chicken, pressing it firmly into the oil.
- Preheat the fryer. Set your air fryer to 200°C for 5 minutes. Wait until the basket is radiating heat.
- Arrange the basket. Place chicken in a single layer, ensuring no pieces are touching.
- The first blast. Cook at 200°C for 8 minutes.
- The flip. Turn the chicken over. Cook for another 5 to 7 minutes until the internal temp hits 74°C.
- The rest. Remove chicken and let it sit on a board. Wait 5 minutes before slicing to keep it juicy.
