Ingredients:

  • 680g (1.5 lbs) chicken breasts
  • 30 ml (2 tbsp) olive oil
  • 1 tbsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 0.5 tsp onion powder
  • 1 tsp kosher salt
  • 0.5 tsp black pepper

Instructions:

  1. Prep the meat. Pat the 680g of chicken breasts completely dry with paper towels. Note: Surface moisture is the enemy of a good sear.
  2. Evening the thickness. Place chicken between plastic wrap and gently pound the thickest parts. Do this until the breast is a uniform thickness.
  3. Oil the surface. Drizzle 30 ml of olive oil over the chicken and massage it in.
  4. Mix the rub. Combine garlic powder, oregano, thyme, paprika, onion powder, salt, and pepper in a small bowl.
  5. Coat thoroughly. Sprinkle the spice mix over the chicken, pressing it firmly into the oil.
  6. Preheat the fryer. Set your air fryer to 200°C for 5 minutes. Wait until the basket is radiating heat.
  7. Arrange the basket. Place chicken in a single layer, ensuring no pieces are touching.
  8. The first blast. Cook at 200°C for 8 minutes.
  9. The flip. Turn the chicken over. Cook for another 5 to 7 minutes until the internal temp hits 74°C.
  10. The rest. Remove chicken and let it sit on a board. Wait 5 minutes before slicing to keep it juicy.
