Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup unsalted butter, chilled and cubed
  • 4-5 tablespoons ice water
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup shredded cheese (e.g., Gruyère or cheddar)
  • 1 cup fresh spinach, chopped
  • ½ cup cooked bacon or ham, diced (optional)
  • Salt and pepper to taste
  • ¼ teaspoon nutmeg (optional)

Instructions:

  1. Combine flour and salt in a bowl.
  2. Cut in butter until crumbly.
  3. Gradually add ice water until dough forms.
  4. Roll out and place in pie dish, then chill for 30 minutes.
  5. Preheat the oven to 375°F (190°C).
  6. Blind bake the crust for 10 minutes until lightly golden.
  7. In a mixing bowl, whisk together eggs and cream.
  8. Stir in cheese, vegetables, meat, salt, pepper, and nutmeg.
  9. Mix until well combined.
  10. Pour filling into the pre-baked crust.
  11. Smooth the top with a spatula.
  12. Bake for 35–40 minutes until set and golden.
  13. Cool slightly before slicing.
