Ingredients:

  • 2 large overripe bananas
  • 1.5 cups grated zucchini
  • 2 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.5 cup light brown sugar, packed
  • 0.5 cup neutral oil
  • 1 large egg
  • 2 tsp pure vanilla extract
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1.5 tsp ground cinnamon

Instructions:

  1. Mash the bananas until they reach a liquid consistency with very few lumps.
  2. Add the 0.5 cup neutral oil, 1 large egg, 0.5 cup granulated sugar, 0.5 cup light brown sugar, and 2 tsp pure vanilla extract to the bananas.
  3. Fold the grated zucchini into the wet mixture until evenly distributed.
  4. In a separate bowl, whisk 2 cups all purpose flour, 1 tsp baking soda, 0.5 tsp baking powder, 0.5 tsp salt, and 1.5 tsp ground cinnamon.
  5. Pour the dry ingredients into the wet ingredients until no streaks of flour remain.
  6. Pour the batter into a greased or parchment-lined 9x5 inch loaf pan and bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let it sit in the pan for 10 minutes until the edges pull away slightly, then move to a wire rack.
