Ingredients:
- 2 large overripe bananas
- 1.5 cups grated zucchini
- 2 cups all-purpose flour
- 0.5 cup granulated sugar
- 0.5 cup light brown sugar, packed
- 0.5 cup neutral oil
- 1 large egg
- 2 tsp pure vanilla extract
- 1 tsp baking soda
- 0.5 tsp baking powder
- 0.5 tsp salt
- 1.5 tsp ground cinnamon
Instructions:
- Mash the bananas until they reach a liquid consistency with very few lumps.
- Add the 0.5 cup neutral oil, 1 large egg, 0.5 cup granulated sugar, 0.5 cup light brown sugar, and 2 tsp pure vanilla extract to the bananas.
- Fold the grated zucchini into the wet mixture until evenly distributed.
- In a separate bowl, whisk 2 cups all purpose flour, 1 tsp baking soda, 0.5 tsp baking powder, 0.5 tsp salt, and 1.5 tsp ground cinnamon.
- Pour the dry ingredients into the wet ingredients until no streaks of flour remain.
- Pour the batter into a greased or parchment-lined 9x5 inch loaf pan and bake for 60 minutes or until a toothpick inserted into the center comes out clean.
- Let it sit in the pan for 10 minutes until the edges pull away slightly, then move to a wire rack.
