Ingredients:

  • 1 cup unsalted butter (227g), slightly cold and cut into cubes
  • 1 cup granulated sugar (200g)
  • 1 large egg (50g), cold
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour (375g), spooned and leveled
  • 2 tbsp cornstarch (16g)
  • 1/2 tsp baking powder (2g)
  • 1/2 tsp salt (3g)
  • 4 cups powdered sugar (500g), sifted
  • 3 tbsp meringue powder (30g)
  • 6 tbsp warm water (90ml)
  • 3 drops gel food coloring (Black, Orange, and Purple)

Instructions:

  1. Cream Butter & Sugar: In a stand mixer, beat the cubed, slightly cold butter and sugar on medium-high until just combined and smooth. Avoid over-whipping to prevent air bubbles.
  2. Emulsify: Add the egg and vanilla extract. Beat on medium until the egg is fully incorporated and the mixture looks uniform.
  3. Incorporate Dry Ingredients: Turn the mixer to low. Gradually add the flour, cornstarch, baking powder, and salt. Mix until the dough begins to pull away from the sides of the bowl and clumps around the paddle.
  4. Prepare the Surface: Lightly flour your work surface and divide the dough in half.
  5. Roll to Precision: Roll the dough out to exactly 1/4-inch thickness using a rolling pin.
