Ingredients:

  • 15 oz crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp extra virgin olive oil
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • 0.5 tsp dried basil
  • 0.5 tsp fine sea salt
  • 0.25 tsp black pepper
  • 0.25 tsp granulated sugar

Instructions:

  1. In a medium-sized mixing bowl, combine the extra virgin olive oil, finely minced garlic, dried oregano, dried basil, and black pepper.
  2. Stir the oil and herb mixture and let it sit for 2 minutes to allow the oil to extract the flavors from the dried herbs and soften the raw garlic bite.
  3. Add the tomato paste to the oil mixture. Whisk vigorously until the paste and oil are fully emulsified into a smooth, thick, mahogany-colored paste.
  4. Stir in the crushed tomatoes, sea salt, and granulated sugar. Whisk until the sauce is uniform in texture. Taste and adjust salt or red pepper flakes as desired.
  5. Transfer to an airtight glass jar for storage or spread directly onto pizza dough.
