Ingredients:
- 1/2 cup extra virgin olive oil
- 1/4 cup freshly squeezed lemon juice
- 1 teaspoon honey or maple syrup
- 1 tablespoon Dijon mustard
- 1 clove fresh garlic, minced into a fine paste
- 2 tablespoons fresh herbs (parsley, basil, or oregano), finely chopped
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon freshly cracked black pepper
Instructions:
- Prepare the aromatics by mincing the garlic into a nearly translucent paste and finely chopping the fresh herbs.
- In a small mason jar, combine the fresh lemon juice, sea salt, black pepper, Dijon mustard, minced garlic, and honey.
- Swirl or stir the mixture until the salt is fully dissolved in the lemon juice.
- Pour the extra virgin olive oil into the jar on top of the other ingredients.
- Secure the lid tightly and shake vigorously until the mixture is perfectly emulsified and creamy.
