Ingredients:

  • 1/2 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 1 teaspoon honey or maple syrup
  • 1 tablespoon Dijon mustard
  • 1 clove fresh garlic, minced into a fine paste
  • 2 tablespoons fresh herbs (parsley, basil, or oregano), finely chopped
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly cracked black pepper

Instructions:

  1. Prepare the aromatics by mincing the garlic into a nearly translucent paste and finely chopping the fresh herbs.
  2. In a small mason jar, combine the fresh lemon juice, sea salt, black pepper, Dijon mustard, minced garlic, and honey.
  3. Swirl or stir the mixture until the salt is fully dissolved in the lemon juice.
  4. Pour the extra virgin olive oil into the jar on top of the other ingredients.
  5. Secure the lid tightly and shake vigorously until the mixture is perfectly emulsified and creamy.
