Ingredients:
- 1 package (3 oz) orange gelatin mix
- 1 container (16 oz) small curd cottage cheese
- 1 tub (8 oz) whipped topping, thawed
- 1.5 cups mini marshmallows
- 1 can (11 oz) mandarin oranges, drained thoroughly
Instructions:
- Place the mandarin oranges into a fine-mesh strainer over the sink. Let them sit for at least 5 minutes until they look matte and dry.
- In a large mixing bowl, combine the dry orange gelatin powder and the cottage cheese. Stir until the powder is fully dissolved and the mixture is a uniform orange color.
- Add the thawed whipped topping to the bowl. Use a rubber spatula to gently fold the mixture using a 'cut and fold' motion until no white streaks remain.
- Gently fold in the mini marshmallows and the drained mandarin oranges, taking care not to break the orange segments.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the gelatin to hydrate and the marshmallows to soften.
