Ingredients:

  • 15 oz pumpkin puree
  • 14 oz sweetened condensed milk
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 3.4 oz instant vanilla pudding mix
  • 1.5 cups cold whole milk
  • 1 tsp pure vanilla extract
  • 8 oz stabilized whipped topping

Instructions:

  1. In a large mixing bowl, whisk together the pumpkin puree, sweetened condensed milk, cinnamon, ginger, cloves, and nutmeg until the spices are fully integrated and no clumps remain.
  2. In a separate large bowl, vigorously whisk the instant vanilla pudding mix with the cold whole milk and vanilla extract for approximately 2 minutes until the mixture thickens and the whisk leaves trails.
  3. Using a silicone spatula, gently fold the spiced pumpkin mixture into the pudding mixture until the color is uniform.
  4. Fold in the stabilized whipped topping (8 oz) to lighten the density of the pudding.
  5. Transfer the mixture to a serving dish and chill for 4 hours until the surface doesn't jiggle when moved.
