Ingredients:
- 15 oz pumpkin puree
- 14 oz sweetened condensed milk
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 3.4 oz instant vanilla pudding mix
- 1.5 cups cold whole milk
- 1 tsp pure vanilla extract
- 8 oz stabilized whipped topping
Instructions:
- In a large mixing bowl, whisk together the pumpkin puree, sweetened condensed milk, cinnamon, ginger, cloves, and nutmeg until the spices are fully integrated and no clumps remain.
- In a separate large bowl, vigorously whisk the instant vanilla pudding mix with the cold whole milk and vanilla extract for approximately 2 minutes until the mixture thickens and the whisk leaves trails.
- Using a silicone spatula, gently fold the spiced pumpkin mixture into the pudding mixture until the color is uniform.
- Fold in the stabilized whipped topping (8 oz) to lighten the density of the pudding.
- Transfer the mixture to a serving dish and chill for 4 hours until the surface doesn't jiggle when moved.
