Ingredients:
- 2 lbs beef chuck, thinly sliced against the grain
- 2 tbsp cornstarch
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup soy sauce
- 1/2 cup brown sugar, packed
- 1/4 cup hoisin sauce
- 1 tbsp sesame oil
- 1 tbsp fresh ginger, minced
- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes
- 2 stalks green onions, thinly sliced
- 1 tbsp toasted sesame seeds
Instructions:
- Slice the beef chuck into thin strips, about 1/4 inch thick. Make sure you cut across the grain so the meat is easy to chew.
- Toss the beef strips in a large bowl with cornstarch, salt, and pepper. Stir until every piece is lightly coated.
- Whisk together the soy sauce, brown sugar, hoisin, sesame oil, ginger, garlic, and red pepper flakes in a separate bowl. Stir until the brown sugar is fully dissolved.
- Place the coated beef into the slow cooker.
- Pour the sauce over the meat. Stir gently to ensure all the beef is submerged in the liquid.
- Cover and cook on Low for 8 hours. You can use High for 4 hours, but the Low setting usually results in more tender beef.
- Check the meat 30 minutes before the end. It should be tender enough to break with a fork.
- If the sauce looks too thin, leave the lid off for the final 30 minutes of cooking to let it reduce and thicken.
- Stir the beef one last time to coat it in the glossy sauce.
- Garnish with sliced green onions and toasted sesame seeds before serving.
