Ingredients:

  • 1 lb fresh rhubarb, sliced into 1/2-inch pieces
  • 1/2 cup granulated sugar
  • 1 tbsp fresh lemon juice
  • 1/2 tsp vanilla extract
  • 1 pinch salt

Instructions:

  1. Wash the rhubarb thoroughly and pat it dry. Slice the stalks into uniform 1/2 inch pieces. Note: Uniform size ensures everything finishes at the same time.
  2. Place the sliced rhubarb, sugar, and lemon juice in your medium saucepan.
  3. Turn the heat to medium and stir gently to coat every piece in the sugar mixture.
  4. Bring the mixture to a gentle simmer. Cook for 10-12 minutes, stirring occasionally, until the rhubarb is tender and the liquid looks syrupy.
  5. Remove the pan from the heat immediately.
  6. Stir in the vanilla extract and a pinch of salt.
  7. Let the mixture sit for 5 minutes. This is where the syrup thickens and glazes the fruit.
