Ingredients:
- 1 lb fresh rhubarb, sliced into 1/2-inch pieces
- 1/2 cup granulated sugar
- 1 tbsp fresh lemon juice
- 1/2 tsp vanilla extract
- 1 pinch salt
Instructions:
- Wash the rhubarb thoroughly and pat it dry. Slice the stalks into uniform 1/2 inch pieces. Note: Uniform size ensures everything finishes at the same time.
- Place the sliced rhubarb, sugar, and lemon juice in your medium saucepan.
- Turn the heat to medium and stir gently to coat every piece in the sugar mixture.
- Bring the mixture to a gentle simmer. Cook for 10-12 minutes, stirring occasionally, until the rhubarb is tender and the liquid looks syrupy.
- Remove the pan from the heat immediately.
- Stir in the vanilla extract and a pinch of salt.
- Let the mixture sit for 5 minutes. This is where the syrup thickens and glazes the fruit.
