Ingredients:
- 1.5 cups (190g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tsp baking soda
- 0.5 tsp sea salt
- 3 large overripe bananas, mashed (approx. 330g)
- 0.5 cup (115g) unsalted butter, melted and cooled
- 0.25 cup (60g) plain Greek yogurt
- 1 large egg, room temperature
- 1 tsp pure vanilla extract
- 1.5 cups (225g) fresh strawberries, hulled and diced
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line with parchment paper.
- In a medium bowl, mash the bananas until smooth. Whisk in the melted butter, Greek yogurt, egg, and vanilla extract until well combined.
- In a large bowl, whisk together the flour, sugar, baking soda, and salt. Create a well in the center.
- Pour the wet banana mixture into the dry ingredients. Gently fold with a spatula until just combined and no dry flour streaks remain.
- Toss the diced strawberries with a tablespoon of flour to prevent sinking, then gently fold them into the batter.
- Pour the batter into the prepared loaf pan. Bake for 60–65 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
