- 1 cup Unsalted Butter (2 sticks, 227 g), softened
- ¾ cup Granulated Sugar (150 g)
- 1 Large Egg, room temperature
- 1 teaspoon Vanilla Extract (5 ml)
- 8 oz block Full-Fat Cream Cheese (226 g), softened
- ½ cup Unsalted Butter (1 stick, 113 g), softened, for frosting
- 1 teaspoon Vanilla Extract (5 ml), for frosting
- 3 cups Powdered Sugar (360 g), sifted
- 1 pint Strawberries, sliced thinly
- 1 cup Blueberries, whole, rinsed
- 3 large Kiwi Fruit, peeled and sliced
- 1 can (11 oz) Mandarin Orange Segments, drained
- ¼ cup Apricot Jam
- 1 tablespoon Water
Instructions:
- Preheat the oven to 375°F (190°C). Lightly grease a 12-inch pizza pan. Whisk together the flour, baking powder, and salt in a medium bowl.
- Cream the softened butter and granulated sugar until light and fluffy (about 3 minutes). Beat in the egg and 1 teaspoon of vanilla extract. Gradually add the dry ingredients until a soft dough forms.
- Gather the dough into a ball and chill for 60 minutes. Then, press the chilled dough evenly onto the pizza pan, ensuring the thickness is uniform with a slight lip around the edge.
- Bake for 15–18 minutes, or until the edges are light golden brown. Remove the crust from the oven and cool completely on a wire rack (approx. 60 minutes).
- Prepare the frosting: Beat the softened cream cheese and ½ cup butter until smooth. Beat in 1 teaspoon of vanilla extract. Gradually incorporate the sifted powdered sugar and beat until the frosting is light and fluffy.
- Once the crust is completely cool, spread the cream cheese frosting evenly over the top, leaving a small ½-inch border of crust exposed.
- Arrange the prepared fruit (strawberries, blueberries, kiwi, oranges) attractively over the frosting layer.
- Prepare the glaze: Combine the apricot jam and water in a small saucepan and heat gently until smooth and syrupy. Strain if necessary. Using a pastry brush, lightly brush the warmed glaze over all the fruit to add shine.
- Refrigerate the assembled Fruit Pizza for at least 30 minutes before slicing to allow the frosting to firm up, ensuring clean slices.
