Ingredients:
- 1 medium head of red cabbage, thinly sliced (about 4 cups or 300g)
- 2 tablespoons olive oil (30ml)
- 1 medium onion, finely chopped (about 150g)
- 2 cloves garlic, minced
- 1 teaspoon ground cinnamon (2g)
- 1/2 teaspoon ground nutmeg (1g)
- 1/2 teaspoon ground cumin (1g)
- Salt and pepper, to taste
- 1 tablespoon apple cider vinegar (15ml)
- 1 tablespoon maple syrup or honey (optional, 15ml)
Instructions:
- Remove the outer leaves of the cabbage and rinse. Cut the cabbage into quarters, remove the core, and slice it thinly.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent (about 5 minutes).
- Stir in minced garlic and sauté for an additional 1 minute until fragrant.
- Add sliced red cabbage to the skillet, tossing to coat in the oil and onions.
- Sprinkle in ground cinnamon, nutmeg, cumin, salt, and pepper, mixing well.
- Cook for about 10-15 minutes, stirring occasionally, until the cabbage is tender but still slightly crisp.
- Stir in apple cider vinegar and maple syrup or honey (if using), cooking for another 2 minutes.
- Adjust seasoning if necessary and let cool slightly before serving.
