Ingredients:

  • 1 medium head of red cabbage, thinly sliced (about 4 cups or 300g)
  • 2 tablespoons olive oil (30ml)
  • 1 medium onion, finely chopped (about 150g)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cinnamon (2g)
  • 1/2 teaspoon ground nutmeg (1g)
  • 1/2 teaspoon ground cumin (1g)
  • Salt and pepper, to taste
  • 1 tablespoon apple cider vinegar (15ml)
  • 1 tablespoon maple syrup or honey (optional, 15ml)

Instructions:

  1. Remove the outer leaves of the cabbage and rinse. Cut the cabbage into quarters, remove the core, and slice it thinly.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent (about 5 minutes).
  3. Stir in minced garlic and sauté for an additional 1 minute until fragrant.
  4. Add sliced red cabbage to the skillet, tossing to coat in the oil and onions.
  5. Sprinkle in ground cinnamon, nutmeg, cumin, salt, and pepper, mixing well.
  6. Cook for about 10-15 minutes, stirring occasionally, until the cabbage is tender but still slightly crisp.
  7. Stir in apple cider vinegar and maple syrup or honey (if using), cooking for another 2 minutes.
  8. Adjust seasoning if necessary and let cool slightly before serving.
