Ingredients:

  • 1 tbsp Olive Oil (15 ml)
  • 1 lb Ground Beef (450g)
  • 1 packet Taco Seasoning (approx. 1 oz/28g)
  • 1/2 cup Water (120 ml)
  • 1 (15 oz/425g) can Black Beans, rinsed and drained
  • 1 (15 oz/425g) can Corn, drained
  • 1 (10 oz/280g) can Diced Tomatoes and Green Chilies
  • 8 oz Tortilla Chips (225g)
  • 2 cups Shredded Cheddar Cheese (225g)
  • 1 cup Sour Cream (240ml)
  • 1/2 cup Salsa (120 ml)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Stir in taco seasoning and water. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the sauce has slightly thickened.
  4. Stir in black beans, corn, and diced tomatoes and green chilies. Heat through.
  5. Spread a thin layer of the ground beef mixture in the bottom of the baking dish. Top with a layer of tortilla chips, breaking them into smaller pieces if necessary to fit. Sprinkle with 1/2 of the shredded cheese. Repeat layers: beef mixture, tortilla chips, remaining cheese.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. While the casserole is baking, combine sour cream and salsa in a small bowl.
  8. Let the casserole cool for a few minutes before cutting into squares and serving. Top with sour cream mixture and your favourite garnishes. Enjoy this delicious taco casserole with tortilla chips!
