Ingredients:

  • 1 can (15 oz / 425g) Mexicorn (drained)
  • 1 cup (240g) sour cream
  • 1 cup (250g) cream cheese, softened
  • 1 cup (100g) shredded cheddar cheese
  • ½ cup (120ml) mayonnaise
  • 2 green onions, finely chopped
  • 1 teaspoon (5g) garlic powder
  • 1 teaspoon (5g) chili powder
  • Salt and pepper to taste
  • Tortilla chips or fresh vegetable sticks (like bell peppers, cucumbers)

Instructions:

  1. In a large mixing bowl, combine softened cream cheese and mayonnaise. Mix until smooth.
  2. Stir in sour cream and mix well until fully incorporated.
  3. Add shredded cheddar cheese, garlic powder, chili powder, salt, and pepper. Mix until evenly distributed.
  4. Gently fold in the drained mexicorn and chopped green onions until just combined.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Transfer to a serving dish and enjoy with tortilla chips or fresh vegetable sticks.
