Ingredients:

  • 1 tablespoon vegetable oil (15 ml)
  • 1 pound ground beef (450g)
  • 1 packet (approximately 1 ounce or 30g) taco seasoning
  • ¾ cup water (175ml)
  • 1 (15 ounce/425g) can tomato sauce
  • 1 (15 ounce/425g) can black beans, rinsed and drained
  • 1 (15 ounce/425g) can corn, drained
  • 10-12 (6-inch/15cm) flour tortillas
  • 2 cups shredded cheddar cheese (200g), divided

Instructions:

  1. Preheat oven to 375°F (190°C/Gas Mark 5). Lightly grease the baking dish.
  2. Heat oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  3. Stir in taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until slightly thickened.
  4. Stir in tomato sauce, black beans, and corn. Mix well.
  5. Spread a thin layer of the beef mixture on the bottom of the baking dish. Top with tortillas (slightly overlapping if necessary), followed by half the remaining beef mixture and 1 cup of cheddar cheese.
  6. Repeat layering: tortillas, remaining beef mixture, and the remaining 1 cup of cheddar cheese.
  7. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is melted and bubbly.
  8. Let the casserole rest for 5-10 minutes before cutting into squares and serving with your favorite toppings.
