Ingredients:
- 1 tablespoon vegetable oil (15 ml)
- 1 pound ground beef (450g)
- 1 packet (approximately 1 ounce or 30g) taco seasoning
- ¾ cup water (175ml)
- 1 (15 ounce/425g) can tomato sauce
- 1 (15 ounce/425g) can black beans, rinsed and drained
- 1 (15 ounce/425g) can corn, drained
- 10-12 (6-inch/15cm) flour tortillas
- 2 cups shredded cheddar cheese (200g), divided
Instructions:
- Preheat oven to 375°F (190°C/Gas Mark 5). Lightly grease the baking dish.
- Heat oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
- Stir in taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until slightly thickened.
- Stir in tomato sauce, black beans, and corn. Mix well.
- Spread a thin layer of the beef mixture on the bottom of the baking dish. Top with tortillas (slightly overlapping if necessary), followed by half the remaining beef mixture and 1 cup of cheddar cheese.
- Repeat layering: tortillas, remaining beef mixture, and the remaining 1 cup of cheddar cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is melted and bubbly.
- Let the casserole rest for 5-10 minutes before cutting into squares and serving with your favorite toppings.
