Ingredients:

  • 1 pound (450g) ground beef
  • 1 medium onion, chopped (about 1 cup / 150g)
  • 1 packet (1 ounce/28g) taco seasoning
  • 1/2 cup (120ml) water
  • 1 (15 ounce/425g) can refried beans
  • 1 (16 ounce/450g) jar salsa
  • 1 (8 ounce/225g) bag tortilla chips, coarsely crushed (about 6 cups)
  • 2 cups (225g) shredded cheddar cheese, divided
  • 1/2 cup (120ml) sour cream, for topping (optional)
  • 1/4 cup (60ml) chopped green onions, for garnish (optional)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, brown ground beef over medium heat. Drain any excess grease.
  3. Stir in taco seasoning and water. Simmer for 5 minutes, stirring occasionally, until the liquid is absorbed.
  4. Spread refried beans evenly across the bottom of the baking dish.
  5. Spoon salsa over the refried beans. Sprinkle half of the crushed tortilla chips over the salsa.
  6. Spread the seasoned ground beef mixture over the tortilla chips. Sprinkle with half of the shredded cheese.
  7. Repeat layers with remaining tortilla chips and cheese.
  8. Bake for 25-30 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  9. Top with sour cream and green onions, if desired.
  10. Let stand for a few minutes before serving.
