Ingredients:
- 1 pound (450g) ground beef
- 1 medium onion, chopped (about 1 cup / 150g)
- 1 packet (1 ounce/28g) taco seasoning
- 1/2 cup (120ml) water
- 1 (15 ounce/425g) can refried beans
- 1 (16 ounce/450g) jar salsa
- 1 (8 ounce/225g) bag tortilla chips, coarsely crushed (about 6 cups)
- 2 cups (225g) shredded cheddar cheese, divided
- 1/2 cup (120ml) sour cream, for topping (optional)
- 1/4 cup (60ml) chopped green onions, for garnish (optional)
Instructions:
- Preheat oven to 350°F (175°C).
- In a large skillet, brown ground beef over medium heat. Drain any excess grease.
- Stir in taco seasoning and water. Simmer for 5 minutes, stirring occasionally, until the liquid is absorbed.
- Spread refried beans evenly across the bottom of the baking dish.
- Spoon salsa over the refried beans. Sprinkle half of the crushed tortilla chips over the salsa.
- Spread the seasoned ground beef mixture over the tortilla chips. Sprinkle with half of the shredded cheese.
- Repeat layers with remaining tortilla chips and cheese.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
- Top with sour cream and green onions, if desired.
- Let stand for a few minutes before serving.
