Ingredients:

  • 1 cup (240 g) Sourdough Discard (unfed, 100% hydration)
  • 1 cup (240 ml) Whole Milk (or buttermilk)
  • 1 cup (125 g) All-Purpose Flour
  • 2 Tbsp (25 g) Granulated Sugar
  • 1/2 tsp (3 g) Fine Sea Salt
  • 3 Tbsp (45 g) Unsalted Butter (melted and cooled slightly)
  • 1 Large Egg (room temperature)
  • 1 tsp (5 g) Baking Powder (double-acting)
  • 1/2 tsp (2.5 g) Baking Soda (Bicarbonate of Soda)
  • Neutral Oil or Butter (As needed, for cooking)

Instructions:

  1. Combine Wet Ingredients (Evening): In a large mixing bowl, whisk together the sourdough discard and the whole milk until fully combined and smooth.
  2. Add Dry Ingredients (Evening): Whisk in the flour, sugar, and salt until just incorporated. Do not overmix; a few lumps are fine at this stage.
  3. Incorporate Fat (Evening): Gently whisk in the cooled, melted butter until just blended.
  4. Rest (Overnight): Cover the bowl loosely and leave it to rest on the counter at cool room temperature (ideally 68–72°F / 20–22°C) for 8 to 12 hours. The mixture will become slightly bubbly and tangy overnight.
  5. Prepare the Leavening Mix (Morning): In a small separate bowl, lightly whisk the large egg until broken up. Add the baking powder and baking soda directly to the whisked egg. Stir quickly—it will start to foam immediately.
  6. Activate the Batter (Morning): Pour the leavening/egg mixture directly over the rested sourdough batter. Using a rubber spatula, fold the ingredients together gently until just combined. Stop mixing as soon as you no longer see streaks of flour or egg. Avoid overmixing.
  7. Preheat Griddle: Heat a griddle or large frying pan over medium heat. Lightly grease the pan with neutral oil or butter.
  8. Portion and Cook: Pour 1/4 cup (approx. 60ml) of batter per pancake onto the hot griddle, leaving ample space between them.
  9. Flip: Cook for 2–3 minutes until bubbles appear across the surface and the edges look set. Flip the pancakes and cook for another 1–2 minutes until the second side is golden and the centre is cooked through.
  10. Serve: Transfer the finished pancakes to a wire rack or stack them lightly under a tea towel to keep warm. Serve immediately with your favourite toppings.
