Ingredients:

  • 1/4 cup soy sauce (low-sodium recommended)
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice (about 1 lime)
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 tablespoon sesame oil
  • 8 chicken drumsticks (approximately 2 pounds or 900 g)
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish (optional)

Instructions:

  1. In a mixing bowl, whisk together the soy sauce, fish sauce, lime juice, brown sugar, garlic powder, ground ginger, red pepper flakes, and sesame oil until combined.
  2. Season the chicken drumsticks with salt and pepper. Place the drumsticks in a resealable plastic bag or a shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
  3. Preheat your oven to 400°F (200°C).
  4. Line a baking sheet with aluminum foil or parchment paper for easy cleanup. Arrange the marinated drumsticks on the baking sheet, ensuring they are spaced apart.
  5. Bake in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
  6. Remove from the oven, garnish with fresh cilantro, and serve immediately.
