Ingredients:

  • 4 (6-8 oz / 170-225g) cod fillets, skin on or off
  • 1/2 cup (113g / 4oz) unsalted butter, melted
  • 6 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley, plus more for garnish
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Preheat the oven to 400°F (200°C / Gas Mark 6).
  2. In a small saucepan or microwave-safe bowl, melt the butter. Whisk in the minced garlic, lemon juice, parsley, oregano, red pepper flakes (if using), salt, and pepper.
  3. Place the cod fillets in the baking dish. If using skin-on fillets, pat them dry first.
  4. Pour the garlic butter evenly over the cod fillets, ensuring they are well coated.
  5. Bake for 12-15 minutes, or until the cod is opaque and flakes easily with a fork.
  6. For a slightly browned top, broil for the last 1-2 minutes, watching carefully to prevent burning (optional).
  7. Garnish with fresh parsley and serve immediately.
