Ingredients:
- 4 (6-8 oz / 170-225g) cod fillets, skin on or off
- 1/2 cup (113g / 4oz) unsalted butter, melted
- 6 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley, plus more for garnish
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
Instructions:
- Preheat the oven to 400°F (200°C / Gas Mark 6).
- In a small saucepan or microwave-safe bowl, melt the butter. Whisk in the minced garlic, lemon juice, parsley, oregano, red pepper flakes (if using), salt, and pepper.
- Place the cod fillets in the baking dish. If using skin-on fillets, pat them dry first.
- Pour the garlic butter evenly over the cod fillets, ensuring they are well coated.
- Bake for 12-15 minutes, or until the cod is opaque and flakes easily with a fork.
- For a slightly browned top, broil for the last 1-2 minutes, watching carefully to prevent burning (optional).
- Garnish with fresh parsley and serve immediately.
