Ingredients:
- 2 lbs beef chuck roast, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup unsalted butter, melted
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, finely chopped
- 1 tbsp Worcestershire sauce
- 1 tsp onion powder
- 1/4 cup beef broth
- 1 tbsp soy sauce
Instructions:
- Pat the beef cubes completely dry with paper towels and season with salt and pepper.
- Heat olive oil in a cast iron skillet over high heat. Sear beef in batches for 2 minutes per side until a deep mahogany crust forms, then transfer to the slow cooker.
- In a small bowl, whisk together melted butter, minced garlic, chopped rosemary, Worcestershire sauce, and onion powder.
- Pour the beef broth and soy sauce into the bottom of the slow cooker.
- Place the seared beef bites into the pot, ensuring they are not overly crowded.
- Pour the garlic-butter mixture evenly over the top of the meat.
- Cover and cook on High for 4 hours or Low for 7–8 hours until the beef is fork-tender.
