Ingredients:

  • 2 cups garlic cloves, peeled
  • 1 cup extra virgin olive oil
  • 1 teaspoon fresh thyme leaves (optional)
  • 1/2 teaspoon salt
  • Pinch of black pepper (optional)

Instructions:

  1. Preheat the oven to 250°F (120°C).
  2. Peel garlic cloves and measure out into a bowl.
  3. Combine garlic, olive oil, thyme, salt, and pepper in the oven-safe dish. Ensure the garlic is fully submerged.
  4. Cover the dish tightly with a lid or aluminum foil.
  5. Place in the oven and cook for 60 minutes until the garlic is tender and lightly golden.
  6. Remove from oven and let cool slightly.
  7. Transfer the garlic and oil to an airtight container for storage.
  8. Refrigerate and use within 2-3 weeks.
