Ingredients:

  • 8 ounces (225g) dried egg noodles
  • 2 quarts (2 liters) water
  • 1 tablespoon salt
  • 4 tablespoons (60ml) unsalted butter
  • 8 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon fish sauce
  • 1 teaspoon brown sugar
  • ½ teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro, for garnish (optional)
  • 1 tablespoon toasted sesame seeds, for garnish (optional)

Instructions:

  1. Boil noodles according to package directions until al dente. Drain well, reserving about 1/4 cup of pasta water.
  2. While noodles cook, mince garlic.
  3. Melt butter in a large skillet or wok over medium heat. Add minced garlic and cook, stirring frequently, until golden brown and fragrant (about 2-3 minutes). Be careful not to burn!
  4. Add soy sauce, oyster sauce (if using), fish sauce, brown sugar, and black pepper to the skillet. Whisk to combine and bring to a simmer.
  5. Add the cooked noodles to the skillet. Toss well to coat, adding reserved pasta water a little at a time if the sauce is too thick.
  6. Garnish with chopped cilantro and toasted sesame seeds, if desired. Serve immediately. Enjoy your garlic noodles!
